Yeah i'm curious too. I heard that the food processor is a great way to make dough as well but I am lazy and don't want to pull it out or clean it up.

thanks all

it’s my standard lean white bread dough. i use it for all sorts of simple bread.

100% flour
65% water
3% salt
couple of grams of yeast (if you really need an amount let’s say 1%)

knead, either mechanically or by hand until the dough is smooth and tacky without being sticky and leaving residue on your hands. roll into a tight ball and ferment it for a couple of hours.

if you don’t like to fuss with kneading, stir all the ingredients together until combined and there’s no visible dry flour. put in an airtight bowl in the fridge for 24h. take it out, let it warm up, then roll into a ball and proceed as above.

cfs: bought a new bag of urad dal and tried to make idli, but the batter didn't end up fermenting. put it in my new "fermentation chamber" (aka an inkbird, a heating pad, and a cooler) so it should have been warm enough. that's like two different bags i've tried and failed with. this one has an expiration date that's in september though so it's probably old. i should read the bags before i buy them.

at least my sambar is getting better. ground up some powder with the grinder i got for christmas.
