i’m not, you can have all the horse cheese you can handle. i’m not being a purist or anything, i like to add inclusions to my mac and cheese too, horseradish just isn’t one of them.

if i do add something it’s usually like roasted cherry tomatoes with bacon and an herb. also partial to other roasted veg.

I had a friend growing up who had polish grandparents and breakfast on easter was A Thing and so his grandpa would make a whole spread including scrambled eggs with an absolutely loving nuclear amount of horseradish in it. they fuckin' ruled.

I mean I love horseradish and make my own but grandpa joe absolutely did not gently caress around

quiche with smoked salmon, goat cheese, dill, garlic, shallot, and what was in the fridge, viz. broccoli, asparagus, spinach. I didn't account for how salty the salmon was going to be, next time I'll ease up on the salt in the filling.

Dunno. I am a pastry novice. I didn't want sugar in the crust so I followed this recipe and stopped short of going all the way to "mealy".

classic pie dough! that’s pretty much how i make all pie crusts sweet or savoury. easy to remember as a 3:2:1 crust, or 3 parts flour, 2 parts butter, 1 part water by weight.

either way ur quiche looks good. i love quiche

that looks awesome. how did you roast the veggies?
I love a burnt veg but i feel like it takes 200 years to do it in my oven, especially if they are that close together

maybe I'm cooking on too low of a temp

what temp are you roasting at? it's almost impossible for the oven to be too hot to roast a veg; there's so much water, and if you keep an eye on them, you can pull them before they get bad.

a good trick as well is to prep and chop your veg, then put them in the microwave with a little salt for about five minutes. then drain if necessary, toss with oil and put in the oven as usual

i take it it's similar to grilling meat- the salt pulls water to the surface and gives a more satisfying char/roast for all your maillard needs

salt is underrated in its cooking uses before anything hits the plate

pretty much, a large part of cooking time for veg is just getting all that water out of there, and salt + nukulotrons really speed things up. it can cut times in half sometimes

Years ago* there was a company in Milwaukee that used to sell hot sauce with doggos on they bottles at like farmers markets and street fairs and such but they're gone now.

They had such good hot sauces I expected them to survive so I used all the doggo sauces we got.

I miss them.

:(
