grinding some coffee, soon i will be aeropressing it. i had a dream the other night that my aeropress broke and i woke up mid-'nooooooooooooooooo'. but it turns out my aeropress is okay and dreams can teach you to appreciate things more sometimes

that's overly complicated, if you just buy a vessel that has a pump it would be fine (i have uh seen weed dealers use them) stale coffee isn't really bitterer ime, just not as good

i mean coffee does offgas and i assume keeping grounds (with huge surface area/volume ratio) in a vacuum would do weird things compared to being at STP in nitrogen

i am prepared to test this

i don't think so...the co2 offgassing is fine. in fact if you roast and want to drink right after you can grind the beans and let it sit for half an hour to degas. the real issue is that you don't want to expose the grounds to unnecessary oxygen. this is why sealed coffee can actually be really good....the first day you open the container. then it's staled.

the big companies that do cardboard cylinders of coffee likely do some form of inert gas, but plenty of coffee is sold in vac-packed bricks.

a decent handgrinder is pretty good for knocking out a cup or two of coffee without the noise

a big fluffy towel around an electric grinder also works to muffle the noise pretty well, i've found
