i had horse sashimi in tokyo once. i'm not 100% sure it wasn't a translation error, because it seemed a lot like beef carpaccio. also the menu listed a chicken sashimi, which doesn't seem safe

the way they deal with chicken sashimi being unsafe is basically they just get sick from it a lot their food regulators are like "please dont" all the time and the actual people are like "lol no, we're gonna eat it"

the only fermented meats I’m willing to touch are the Nordic rotten fish ones like rakfisk or surströmming fermented pork sounds absolutely dreadful
