1kg Dutch Cream or other waxy Potatos 250g butter, cold, cut into cubes 1/4 C. Sour Cream Fresh chives Quite a bit of salt Roast potatos skin on until fork tender. Halve the potatos whilst piping hot and smash them through a drum sieve into a bowl. Use a cloth or something so you dont burn your precious little salad hands. Slowly fold in the cold butter, scraping the sides of the bowl until totally melted and emulsified. Add sour cream and minced chives. Salt to taste.

microwaving is okay if ur short on time cause you can still oil and salt em up and toss in the oven for a couple minutes to crisp up the skin instant is just no excuse tho
