Which speaks to what we all love about Costco: You can buy some really artisanal, gourmet poo poo at great prices. You may have to buy a pound of it at once, but it's not marked up like crazy. It usually costs 300% as much at Whole Foods because they sell it in 12oz jars or whatever. A 12oz jar is definitely more convenient but i'll find something to do with 3lbs of cheese.

The other day at Costco I saw 1-pound packages of fresh chanterelles in the refrigerated section, cheaper than buying the equivalent weight in dried ones elsewhere. I was going to pick some up, then realized I didn't have anything to cook that was going to require a whole goddamned pound of chanterelle mushrooms.

What I'm trying to say is that I need some cooking ideas so I can justify buying a pound of chanterelles.

We make chanterelle fritters. Tear them into strips, mix with strips of red onion and squash, boil briefly in water till soft, drain, mix with bread crumbs and eggs, form into pattys, pan fry in butter.

Back to cauliflower rice: Costco sells a frozen stuffing made with cauliflower rice that is actually pretty good. I just had some and really enjoyed it. It smells just stuffing. It tastes really good and mimics stuffing well, but it's made with cauliflower rice obviously. Lots of carrots and cranberries. So while it's similar to stuffing, it's a little different. It's still very good though and if you are finding ways to cut back on calories and carbs, i'd recommend trying it. If you are trying to do the keto diet thing, it's probably got too many carbs for you unless you really watch your serving size, but it's also got a whole lot less than regular stuffing. I think a serving is like 9g of carbs.

I bet if you pretended you made it from scratch and brought it to like an organic, vegan holiday dinner, everyone would think you were some kind of master chef and all you had to do was toss it around in a skillet for 15 minutes.

Make dashi, then cook with that. Can be done vegetarian/vegan if desired. typically done with shitake, but works with other mushrooms too. Great for using the last mushrooms when you realize you gotta do something or they will go bad.

I was wondering the same thing. There is an annual cap and it will sure trigger that. I imagine you still get the 2%, but annually you can only receive $1,000 in cash back. So for items of that size you would immediately hit your annual cap.\

Edit: out of curiosity I wanted to check what my yearly total for the executive membership is and its almost $170 right now. I still have almost 3 months to go before the deadline (it's usually 2 months before renewal) and this has been a pandemic year where i've barely gone to Costco. I just spend a ton online.

Depends. Sometimes the warranty is an extension of the mfg warranty, sometimes it's a Citi warranty program when you use the Costco Citi card.

If it's just the extended mfg warranty I don't believe you need to maintain your membership. If it's the Citi card you may need to keep the card but unsure of the warehouse membership.

The T&C only mention a limit of 4% up $7,000 spent on gas, so presumably if they bought the diamond on card they should get the 2% Executive up to $1,000 as mentioned above (hit at $50,000 spent/year assuming the purchaser was) and 2% Visa cash back.

yeah polish was the best for brown mustard + kraut + onion combo. regular dog is just eh, fine for $1.5 but disappointing compared to what could be.

now all those are gone so :rip:. part of it is covid-related, but i doubt they're coming back. they've seemed like they;'ve been trying to get rid of onions for awhile and cutting kraut was easy when it's already hidden away and have to put it into cups/etc so most people don't know so just get rid of it. and they don't even make money off dogs so why not cut the polish too which is an unnecessary expensive of maintaining 2 dog stations.

the food court is going to be in a very sad state for years to come. they've kept trying to make it a money-maker slinging $5-$6 items and that keeps flopping, so who knows what the future will be.

also bring back $1 churro cowards. it wasn't even an amazing churro, but it was great having a $1 option that's easy to eat walking around without being too filling or overbearing.

The churro never went away at my churches.
The ones in Seattle were pretty lame (like most PNW Mexican food) not enough cinnamon, but in LA they got them right.

eh i guess $1.5 is still fine. chocolate in them sounds terrible though. they definitely needed more cinnamon though.

yeah well it doesnt help they've been loving with it and often gently caress with recipes too. Chicken bakes I felt used to be pretty good back in the early-mid 2000s but then changed it sometime later and have been bad ever since. New Acai Bowls were utter garbage trash like seriously the worst acai bowl I've ever had. Vegan al pastor was.... fine.. it's just not what I want out of a food court like that. the turkey sandwich sucked. i might begetting mixed up but I felt they used to have really good soft-serve/froyo but then removed it and hasn't been good. they got rid of the berry smoothies. Pizza has also seemed like it's undergone some changes since the 2000s and is very hit or meh, plus they got rid of the combo pizza.

i might be crazy but i recall price-club/costco having great pretzles but maybe im getting it mixed up.

it'd be nice just to focus on easier cheaper handheld-items to sling out like bulgogi bakes, stromboli, hot dogs, fries/poutine, giant pretzels, churros, etc. hamburgers and poo poo just seem like a terrible idea requiring a lot of prep and machinery.
