You say as if the only package or the only way to buy ships is if you buy the 27k one! There are a variety of packages and 27k is the ultimate one for any ultra-rich/passionate(or an org) person to buy.
Second,, in two years we had planetary tech with currently 3 moons with different biomes that players can in real time land on and explore with new ground vehicles like cyclone, hover bikes and more. Cargo transportation missions and player-generated service beacon missions.soon in coming months we shall see mining, refining, repairing, fuel related gameplay.
And many more planets, star systems ,game mechanics,
missions and ships are being worked on. Soon with object container streaming, we may also see faster framerates.
I believe those are enough reasons.

The critics should care to note that all ships and other items (like plots) are nothing but pledge money. It goes directly to fund the game.
Second, this pack has been available since the very beginning of the project and now has been updated.
Third, the ones who buy this pack are ultra-rich or ultra-passionate folks(or both) who want to have every ship in the game or an organization containing thousands (and even tens of thousands) of members.
Fourth, neither in the game development nor the way funding should be done there is any precedence or industry-standard of this scale and level for CIG to follow. So they do their best to be transparent with the backers by weekly publishing Q&A (Calling All Devs), Reverse the Verse and feature shows like Around the Verse (which also contains studio updates or S42 updates).

Now if you are an impatient person that always want things instantly (but of low quality) then this game is not meant for you, find a new one or get a new hobby.
Or you can also do that in the meanwhile and wait patiently like we all supporters have since 1998, when the undertaker threw mankind off hell in a cell, and plummeted 16 feet through an announcer's table.

I'm kind of surprised that the thread was not buried within days of the announcement considering the reactions, but I guess they need freebie tutorials more, because who's going to bother with them in a game development company that doesn't really care about gameplay or having fun in the game, or actually developing a game.

All of those things you just listed are on the schedule, they will be delivered in <patch number>
They are doing a lot of the ground-work tech / pipelines that will pave the way for faster content creation later.
Oh, they already have the tech for <most of new feature that came out of nowhere>, it's not much effort to add.

Funding Model, Sales, Marketing Criticisms
Star Citizen is doing something different. They are bypassing the greedy publisher model only cares about profit and kills innovation.
Nobody is forcing you to pledge.
I backed the game because I believe in Chris Roberts's vision, it's the game I've always dreamed of playing.
All the ships that can be bought can be acquired in-game, therefore not pay-to-win.
The game does not have subscriptions. You can subscribe to help pay for weekly content which gives us insights into game development never before seen.
You're not buying land! You're buying the ability to claim land. Huge difference.
It's not a scam. They have offices all over the world and the game is playable right now.
CIG is not in any kind of financial trouble, just look at the funding tracker.

Basically they made bad decisions early on and have not walked back those decisions. Changing engines now would shake the faithful too much and kill the level of funding they desire to maintain their lifestyle. I'll preface this with IANAP.

The tools you use affect what you can accomplish. CryEngine is capable of providing a first person experience. It's also capable of providing a platform for a MMO, a top down RTS, and even a side scrolling platformer. And certainly it is capable of being a platform for a space sim.

An engine, however, is governed by the processes it dictates in the rendering of scenes, calculations of physics, and data packets it sends.

If you want the engine to do something that it currently does not do, you have to create a process that does that, and integrate it with the engine's other processes.

The best example I can give is the engine's multiplayer netcode. Currently, CryEngine's core processes for multiplayer dictate it will update every client about every physics activity that happens within the rendered landscape. Now, this is fine for a multiplayer FPS arena with just players and physics-enabled boxes. However, by expanding what is physics enabled, you have increased what the engine has to communicate to servers and clients. At a certain point, this will cause connectivity issues as packets become larger, and clients have to wait longer for those packets to process through their game process. This is usually measured in fractions of seconds, but they might add up to seconds, which would render gameplay a stuttering mess of unfun experience.

So you want to cull the physics objects that communicate updates to a certain radius. Great. However, the engine was not programmed to do that. In fact it's very adamant, to its very core programming, that it will do it the way it was programmed to function. There are a few clever solutions you can build on top of the netcode programming, such as dumping updates from certain objects, but that is not what you want. You want to fundamentally change how the netcode communicates. That requires digging through the Eastern-European spaghetti code deeply nestled and baked into the core programming, and removing every function and process of that code. But you can't just carve it out leaving a gap, you have redefine what the initial trigger for the process asks for, which requires even more deep digging into processes seemingly unrelated to netcode, still rely on functions that process used. Then you have to stitch the new netcode within the engine, and have a library of definitions that the engine understands so it can execute functions within the processes of the gameplay. This also requires testing every process and function within the engine so that you found every reference to old code and cut it out, and redefined triggers to ask for the new functions of the new process.

This can take anywhere between 12-18 months of work by experienced programmers.

Now imagine doing that for nearly every aspect of the engine you're using. The first time for each aspect you do it half-assed. Now you have to do it fully.

That's Star Citizen.
