I've never done a gentoo install on a raspberry pi before, but on a x86-64 machine, I remember that I had to edit an /etc/conf.d/hostname file to set it: https://wiki.gentoo.org/wiki/Handbook:AMD64/Installation/System#Host_and_domain_information
