What are you looking for in a pet? If you like interacting with your cats all the time the black ones sound like the ones for you. If you'd let them do their own thing and actively play with them on occasion then the orange. Presumably both pairs are able to handle being alone in the home when you're at work but if one or the other require constant supervision then that should be a factor. For what it's worth I have a sibling pair that are more like the orange/tabby than the black ones and would be a little annoyed by having them trying to demand attention all the time as opposed to only every now and then.

drooling is often, but not always, a dental/oral issue. anything that impacts the cat's ability to eat, induces pain from touching, or causes a loss of energy or otherwise is accompanied by any marked behavioral change is an asap vet visit. if it's only the drooling then probably just the ravages of age and you can ask the vet on the next checkup but keep an eye for the aforementioned.
