A sub-optimal but still doable solution: you can try to use the image-output plugin for VNC, then play the video and it will dump all the images into a folder. Use gimp then and the 'open as layers' file command. Then save as an animated gif. You can optimize later with gimp by reducing the color palate, reducing the size, and using the 'optimize for x' plugins.
