What is the scale length on your ESP? If you don't know measure from the nut to the 12th fret and double it.
The Guitar Fetish neck doesn't specify either you might want to e-mail and ask them.

If the scale lengths aren't the same the guitar won't play in tune once you put it together.

If you wipe it down after playing every time you can minimize the amount of maintenance cleaning you need to do.
When ever I get a new used guitar I will clean everything on it. A soft cloth and toothbrush and some naptha(don't smoke while cleaning!) will take care of major crud.
Use the toothbrush to scrub the fretboard, saddles, any where that looks grungy clean it naptha won't hurt anything or leave a residue.
Depending on the fretboard wood you might need some lemon oil, or woodwind instrument bore cleaner to condition it after cleaning, rosewood or ebony needs oiled, maple usually just needs cleaned.

Any moving parts, tuners, bridges etc... can be checked while you are cleaning, tighten any screws, loose jacks, knobs.

I like to give my painted guitars a coat of a good quality carnuba wax after cleaning too, it helps making cleaning next time easier.

That's just how I personally do it I'm sure everyone else has their own methods, and products.

I have a hondo strat copy I defretted. You can't really play chords on a fretless guitar. So it is only really good for noodling on.

In regards to maple neck finishes and cleaners. It just isn't necessary to oil a maple fretboard like you need to with rosewood or ebony since it has a hard finish on it the oil just sits on top. If it gets grungy just wipe it off with a microfiber cloth and some naphta.

I like them except for the '51 that you used to be able to get as a squire for under $100. Just don't see how putting Fender on the headstock justifies a $700 price increase.

It's nice to be able to adjust the heat so you can turn it down when doing IC's and transistors, and be able to crank it up to solder grounds to the back of pots and jacks.

I have a Xytronic 379 I paid about the same amount for 7 or 8 years ago, but I think it has been discontinued.

Depends on how the two single coil ones are wound. Some Strat pick up sets for instance have the middle pick up wound in the reverse direction of the neck and bridge so that when it is engaged with the neck or bridge it acts as a humbucker where the two coils cancel out the 60 cycle hum a normal single coil pick up has.
It will still sound different than a true humbucker.

Quality comes more from materials used than the shape of the pickup itself, the magnets used and how hot they are wound contribute more to the sound that the shape as well.

Les Paul didn't care for how the SG looked either and had Gibson take his name off of them because of it.

I like the symmetry of them better than the Valkyrie or the ESP Vipers that have the same sort of offset.

I never cared much for Strats either.

TDPRI has a build competition every year that can be pretty inspiring to new builders. Start trolling eBay too there are always guitars being parted out and guys that make bodies out of different woods traditional to exotic hardwoods.

No you're right about that. I only really pay attention to the Tele Home Depot section. It's a little more progressive then the rest of the board.

The first one is a set neck(glued in) vs. the bolt on neck of the second one.
Both are perfectly fine construction techniques but if you are looking for the Les Paul sound the set neck one will get you closer to it.

There are probably differences in the wood and pick-ups as well but with a solid color you won't see that and pick-ups are easily upgraded. A neck joint isn't.

I don't know how the stock fender HBs are but if they are 4 conductor wired you can have a coil split installed on the bridge.

Was the jack itself replaced when the tech re-wired it?
It just sounds like the jack is bad, you can bend the prong on the jack out and it should make better contact with the plug, or you can go and get a new jack.
It's a simple mechanical connection if holding the plug in fixes it temporarily then replacing the jack should fix it permanently.

Look for needle files.
They usually are sold in a pack of 6 or 8 with a few different shapes/sizes.
Sometimes depending on what the saddle is made of you can give the string that goes over it a whack with a hammer and it will dent a groove into it, but it will wreck that string so change it after.

If you spend the money now you won't have to upgrade later on and will have an instrument you can play forever. Or if you decide to re-sell it later on it will hold its value.
You need to go to a guitar store and just pick up a model of each and see how it feel while you are holding it.
A strat will more hug your body with the contours while a Telecaster is a slab with no contours at all. They also have very different pick-up arrangements, as do some of the CL ones you've picked out.

I have a couple of sets of the GFS strap locks, they seem decent but if you get them put a little locktite on the threads I had one unscrew on me one time.
I have them mounted on a couple of Couch straps too.
I like the couch straps so much I got one of the camera straps to use on my knife roll for work.

EMGs don't get grounded anyways so if it is a retro fit they may have just left the old ground hanging rather than clip it off.
Trace the black wire and see where it goes.

I've really only ever built 2 pick-up guitars. That being said I I don't think you'd miss it much if you got the regular set instead of the rw one.
With a relatively clean tone the buzz from single coils isn't that bad.
As far as phase goes you can try it both ways and put in a switch if you like it.
Solder is easily re-done if you don't like it one way switch it around if you decide you like it both ways put a switch in.
It's not much help I know. Have you tried emailing GFS and seeing if they recommend it one way or another? There has to be someone that has tried that combo before out there.

Moving the strap button to the back of the neck heel can help a neck diving guitar too.
It does require drilling another hole though, so it's a pretty permanent solution.

PB blaster is good at breaking up rust too. But spray it into a metal or glass cup first and use a toothpick to apply drops strategically. It will wick it's way into the screw threads/holes.

Maybe a Bigsby for the trem? It's probably going to run you about $150 just for the trem itself. The B5 style is what would normally be found on a Tele, requires no routing.

If repainting do a matching headstock for maximum surf flavor. That's going to require a replacement decal as well.

Works better than some pedal tuners, doesn't mess with your setup at all.

Seconded. I've had mine for over a year now and the battery is just now starting to die.
Peterson makes a software based tuner, but it is waaayyyy more than a snark would be.

The blue one has a capo feature for transposing, which I guess could be useful if you use a capo a lot(I don't).

I've clipped the red one on my amp cabinet while using my Theremin and it reads the notes perfectly.
