I wouldn't skimp on using offal, it's quite tasty in a dish like this. Beef liver might be a bit too much for most, but tripe and heart is certainly nothing to be afraid of. At a local Sichuan place and they have this with beef tongue and tripe. The waitress referred to it as the "bride and groom".
