For an org with that many mailboxes you should not run into any problems with a new hardware request as part of the migration. One caveat with this is that I've noticed exch 2010 doesn't play well with < Outlook 2007 so make sure your clients are up to snuff/available. This is why we're still stuck on exch 2007 SP3.

The core functionality is there, I think the big problems are with public folders and global address lists. I was thinking about the upgrade but then googled 'outlook 2003 with exchange 2010' and saw all these horror stories and held off; the furor might be overblown it's true.
