And it will be Lancel as the Faith's champion because a. he's pious enough to believe in the 'legitimacy' of a trial-by-battle, b. he's one of Cersei's accusers and c. he's probably the only one stupid enough to fight the evil headless zombie monster.

I'd like Sandor to show up as much as the next person, especially if he's the valonqar of Cersei's prophecy, but the time isn't right. Tommen and Myrcella are still alive, for instance.

Unintentional foreshadowing. In the original draft of that scene, Janos is hanged. GRRM either lucked out by changing it or realized that he could capitalize on it after the fact. Either way, he didn't plan it when he first wrote Sansa's line.
