I'm thinking of making my own giardiniera, but I don't want to give myself botulism. I found a recipe online that involves letting the vegetables sit in olive oil and vinegar for two days, but I've never done anything like this before so I'd like to know if I'm going to kill myself by doing it. This was the recipe, if anyone was interested.
