I just started canning this year myself. I have four gigantic tomato plants so thus far I've made tomato sauce, salsa and tomato paste. With the remaining 30-40lbs I'm probably just going to either make more sauce with them or just skin and seed them and can them like that. It's a lot more fun than I had anticipated.
