I have a random japanese question since a lot of people here know japanese My understanding is that the ん/ソ kana changes to a "ng" sound at the end of words usually so how come ramen isn't pronounced like "rameng"? Is it just because it's a borrowed chinese word so it doesn't undergo the normal sound change? Like wikipedia confirms that the character is pronounced: [ɴ] (at the end of utterances), which is a uvular "ng" sound, so I guess I'm wondering if there's like exceptions to that that come into play here

It's important to note that a uvular N (sorry for the bad IPA; phoneposting) is very different from a velar ng (as in "sing"). This double-major in Japanese and linguistics/phonetics thinks "ramen" does end in a uvular N.

Hell, tons of people on both sides of the language divide hear the standard Japanese "r" ([ɾ]) as a D or an L. Thankfully you're not going to run into any misunderstanding if you hear/say "rameng" versus "ramen". Yeah I mean I get that it's further back it just still sounds similar to me but that could just be because we don't really have it in english so I'm just hearing it as the closest thing, even when I listen to the wikipedia pronunciation sound they sound similar

As far as I know, in Japanese it is pronounced with the uvular [ɴ] at the end in isolation. It's just rarely said in isolation, and the ん/ソ continues to be affected by other sounds across word boundaries. So if you say something like "ramen o tabeta" (My Japanese is pretty basic), the /N/ will be pronounced as a nasalised vowel, because that's how you say it before /o/. But since English doesn't have a sound with those rules, in English loanwords it's just anglicised to always being /n/ at the end of a word.
