I used to work with this woman who would bring in their homemade fermented pineapple beverage. So so good, and it had a hint of chili pepper in it.

Yea! I just started making tepache, and it’s so easy and so delicious. The kitchen uses pineapple for al pastor and I get all the scraps for cocktailing.

I used to be ambivalent about pineapple until a had one fresh off the tree one in Cost Rica. Cans just don't it justice.

I didn't even get as far as draining, i just put it in a garbage bag and tied it off. I returned it to the store mostly so that it wouldn't rot outside in my garbage bin for the next week. And it's pretty cold here!

That has happened to me, but with beef. It smelled pretty much exactly like fermented herring. The explanation I got was that oxygen must have made it's way into the bag, allowing for accelerated bacterial growth.

I know most of you guys are not lactose intolerant, but if you are, YQ yogurt is fantastic. It's 99% lactose free and is as thick as strained/greek yogurt. Tastes exactly the same imo.

QFT. My wife prefers non-dairy milks and I tried some Ripple she got one time; if I ever had to give up dairy for any reason, without question Ripple would be my substitute of choice. Surprisingly close to beef juice, though it has a slight hint of salt that regular milk doesn't have. Texture is very comparable.

Ripple is pricey af though. Or at least, it is up here. I usually use unsweetened almond, but maybe I'll grab a thing of Ripple to try next.

I'm straight up allergic to casein :(

Canada? I was surprised at how expensive a friend told me it was up there.

I usually find them retail at $5 and on sale every so often for $4. Worth it for me as I miss foods with milk.

I used to use pea based protein powder and the ripple pea milk just tasted exactly like that, so anyone who actually thinks it's anything like dairy is insane. Oat milk (and only some brands!) come even close to replicating moo juice.

Now if you live in the south you might be less insane, but that's because southern milk is hot garbage, even fancy grass fed organic stuff.

I was not impressed with any of the oat milks I've had.

Since I'm only minimally lactose intolerant, I am going to get a pint of the good local whole milk today and compare it to the bottle of Ripple I have in the fridge. It's been a while since I've had just a straight up glass of milk, but from what I remember, Ripple gets closer than any of the other substitutes I've tried.


Also, pretty much any milk outside of Wisconsin is trash :boom:
