Beats me. I did a series of tests to try to figure it out. Tried three different yeasts. Warm and cold water. Purified bottled water. Nada. Bread comes out edible - just - but it just doesn't rise properly. I can make pizzas and indian style flat breads but a good loaf isn't happening :/

I like weights because you can put the mixing bowl / sauce pan on the scale and just pour ingredients in one by one, hitting reset in between. Also you can measure liquids by weight much easier than in a measuring jug, and scaling a recipe is easier by weight. Don't get me started on loving tbsp of butter.

Taxi drivers generally know where they're going. I like my driver to keep his eyes on the road not the GPS screen. Hailo works great for requesting a cab, or paying after flagging one down the old way. There's an ingredient list somewhere.. it's tamari (soy sauce), pineapple juice, a few different seaweeds mainly. They're local to me so I can skip the postage, making it decent value.
