VMWare will work with your install media as is. The last time I checked, Virtualbox could boot a premade Lion image but couldn't run the installer, but they might have fixed that by now.

I looked at those IBM m1015 raid cards and I only see two ports on it. Don't you need at least 4 for raid 10? I don't really understand how sas/sata works. Can you hook up regular sata drives to it? Can one port connect multiple drives somehow? Or would I need to use multiple cards.

One SFF-8087 port = 4 SAS or SATA ports. You have to buy a breakout cable if your case doesn't have a backplane that accepts 8087 connectors.
