As someone very new to this, I had more success on my test pieces when I measured and lightly drew guidelines on the leather with a ruler/straightedge.

That's an awesome pouch!

Depending on the leather and how visible/prominent you want the stitch line, you could use a stitch groover to carve a shallow groove for the line. Not sure how it would effect the project in this instance, but it does make it easier to see the stitch line.
