Can I just ignore it completely? Or just do it when I get really big gems?

Gem Crafting is a must. It's not that hard once you get used to it, though you'll never want to use low level gems, always try to get HEAT or MEGA HEAT to get higher level ones.

Most of the gems are useless anyway. I just equipped stat boosting ones.
