Dino, good thread, two questions: 1) What is "Mughali royal food"? As a classy guy I feel I should be eating things like this. 2) Maybe you can help me figure out what this food I once had was. When I was a kid I lived in a group house that had this random 50yo Indian dude living there, he was a professor who was waiting for his family to come over and join him. Anyway, he use to make this dish that was yogurt/coconut milk cooked in a pan with onions. Tons and tons of onions. Sadly I can't remember much else about it but I remember really liking it and have never been able to track down what it was. I know he was from southern india and was a vegetarian, so it might have not been yogurt. I just remember the amazing onion-ness of it.

As for Mughlai food, you're talking all the heavily ghee'd and cream'd dishes. Biriyanis, phulka, all the tandoor type meats, any of the heavily rich qurmas and the like. Basically, it's heavily influenced by the Muslims, which means that it'll have a fair bit more meat, and a lot of dairy products, nuts, etc. It's interesting stuff, but nothing I'd ever have the stomach for. Stuff is hella rich. Awesome, I will try this out ASAP. Maybe Ved would just serve it with yogurt to temper the spice. And the Mughlai food sound exactly like what my fat rear end likes.

So between this and working in a restaurant do you have prune hands like 24/7? Random moving has cramped my style but I have convinced the woman to try that onion dish and am going to make it next week.
