I've been craving ratatouille all week. So I got off work at about 10:30 hit the grocery store, get the veggies, get home, start chopping, and realize about 70% into my chopping that I'm somehow out of onions. I don't think that's happened in ... I don't even remember. No problem, I'll just double the garlic. Turned out really well, I never use bell pepper because bell peppers are disgusting, add some oregano and a bay leaf to the spice blend. I'm getting better at eggplant every time I make this, so its a great learning recipe. Also I was waiting on my bread go to get cool enough to handle so I chopped up a little bit of the brie I was going to have with it and just sprinkled it on top of the veg and it got all nice and melty.
