They keep their level, mana, skill/weapon levels, whatever quality they were created with, etc. Reincarnate sets them back to level 1 and gives them stat bonuses based on how many levels they had banked, just like the old games. Promoting is really good for early game, but you're probably going to be just reincarnating once you hit postgame.
