There is no official word on HBOGo for Fire TV. Amazon says they are working on it but I believe HBO hasn't said a word yet. Is there an HBOGo Plex channel that could be a work around.

If Plex recognizes everything then you should be fine. From the couple hours I spent with Plex Fire TV it seemed about as good as Plex HT. Where will the media be served from if you're removing the HTPC?

Then you'll probably be fine. You can return the Fire TV to either best buy or Amazon if it doesn't work. The only thing you'll be out is the $5 to buy Plex from the Amazon store.

Probably not, the only great thing it offers is cloud playback (files from Google Drive, Dropbox...) or offline syncing. If you are willing to leave a server running constantly it will stream outside of the house very well and even do all of the network tunneling.

Oh awesome, I have such bad luck scrapping I usually just use read organize by dates and filenames, this will let me use Plex instead of XBMC.
