I'm willing to move the deadline time if it works better earlier or later for others. I figured 7 PM PST was the earliest I could reasonably expect anyone in PST working a 9-to-5 could reasonably be expected to show up, while still not making the folks in EST stay up all night. Non-Americans, though... that, I'm not so sure about!

I'm pretty sure it has something do do with the millers had to grind stuff into flour in the wee hours of the night and thus were out and about during the time when only ne'er-do-wells roamed, and therefore were also up to no good, but they only wanted to make sure that the flour was ready for the bakers to bake bread for the people. All they do, they do for the town!
