Regardless, there hasn't been any change in characterization at all. Whether or not the VN origins really matter or because all you've seen is F/Z. It kinda comes with the fact she's kinda super awkward with people after she willingly chose to distance herself from everyone because of her role as a magus.

The routes in FSN focus on these aspects: 1) Differences at certain points in time allowing for you to take a specific choice to get onto it. So you are on the mark for small difference cause a snowball for different events. 2) These changes somewhat make Shirou's ideals differ in each of the three routes.

It doesn't "feel" slow to people because it jumps from Servant team to Servant team so there's a reasonable amount of things to distract. FSN as a whole does not introduce all the Servants right away and also does not focus on certain groups as much due to the very nature of it.

Taiga is taken as a hostage yes, though in the VN they come home from the date and it goes down at the household instead of the bridge IIRC. I think it's less command seal theft as a whole and more "I ended your contract and formed a new one immediately" which would probably replenish the lost three? It's kind of fuzzy how switching Masters works.
