The stay night adaptation isn't the best, but I don't think there's too much lost in terms of critical plot beats. Problem with watching zero first is that you already know most of the big reveals

Much better effects and such compared to the original game with a separate RN patch. I think the RN art assets and new CGs are higher resolution too, since it's not an PS2 upscale anymore. There's an alternate version of that translation patch that also adds in the Vita music and openings, but it's not really worth it IMO because the Vita openings are implemented rather poorly and the Vita music sucks. It also added the porn back in as a toggleable option which it defaults to "On" for some stupid reason. The porn is the true original experience is why

Saber is then able to use this resolution to personally reject the grail after she has the chance to gain it, thus breaking the wish. All this time her original body has been in a state of magical temporal flux. She is returned and able to finish her life with the experience she has acquired. Basically it's magical time travel and much better explained in the vn

The usual methods of servant generation is that a photocopy of a dead hero is summoned and destroyed at the end, they cannot gain experience between wars or retain memories. As saber is not dead, she herself is summoned and fights, then returns to a state of stasis if unsuccessful.

Going back to the original question, within the context of the universe at that point the saber class was agile, resilient, has the best magic resistance meaning that caster is less of a threat, and is just generally the strongest at fighting. The only real weakness saber class has is that they were all swordsmen, but this was compensated for by swordsmen generally having the most iconic legends - the legend of King Arthur being paramount among them. Within universe despite being held back both times, first by a master who had no intention of using her and then by a master ill equipped to use her, artoria still managed to win the holy grail war in all routes where it was run “normally”. Saber lived up to being the strongest card throughout all the routes.
