If Apple and the issuer are the only parties with access to the actual card number, how does a merchant get paid? Does the tokenized number along with the transaction get sent to Apple who then matches it and sends it off? Are the issuing banks getting the tokenized number from Apple? Basically can you explain each step of a transaction from merchant to acquirer?

Also, what do I tell cashiers to choose when selecting a payment type? Do they need to select a payment type or will the NFC reader engage the phone without intervention? I assume they'd hit credit for my Visa credit card, but I know Subway has a 'mobile' payment option (which doesn't seem to work). They pressed credit last time and Apple Pay was successful.
