The study of amphibians, the class of animal, specifically is batrachology. Ironically, not all frogs are very good swimmers, though amphibians generally require water to breed.

Doves (which are basically the same as pigeons) used to be eaten all the time iirc, at least if my King Arthur Pendragon books are accurate. An aviary of doves would make a convenient source of meat in winter.
