Hello, Burger thread! Long time reader, first time poster!

Today I tried making a double patty burger for the first time. Not usually one to do that on a home burger, but I felt like hurting myself today.







Today's beer is a Southern Tier LIVE IPA.


Also, this may rile some of you up but I made a Mexican-inspired burger recently that I'd like to share:



Poblano, jalapeno, anaheim, red onion, tomato, queso fresco, guac, cheddar & pepperjack, salsa verde. Romaine leaf.

Delicious.

It was a lot more well-done than I wanted it to be, again it's my first time making a two-patty burger so I made them thinner'n I'm used to...
But they actually were pretty juicy despite that. Also, it's a ground beef/ground pork mix if that makes any difference.

Lately I've been getting a baby romaine and slicing it into strips for burgers, and pretty much any other lettuce need such as tacos or burritos. It's really easy to handle and it provides a nice crisp.

had another smash attempt with my old cookware but smashing against a hot teflon pan (ugh!) it cooled down too quickly and my existing spatula is flat making it had to smash in the pan.

heavy iron skillet and steak iron will make the diff.

Burgs before cast iron were a joke. Best investment ever.

The other night I had a burger topped with pepper jack, jalapeños, chipotle mayo and andouille sausage. Holy gently caress dudes.

This is the closest I've come.

Around here we have a really good dairy that has cultured butters, each with a unique and delicious flavor and texture, so I'm pretty spoiled.

There's a few artisan bakers too but I prefer my own bread, warm from the oven.

Get the firmest tofu you can find, put it in a colander and stack something reasonably heavy on top (some plates, pot of water, etc - if it's too heavy or the tofu's too soft, it'll just mush out through the holes) and let it sit there and squeeze out most of the water for a while. Then cut it into the shapes you want and roll it in cornstarch and some basic spices (optional, the cornstarch gives them a nicer skin imho) before frying them up like home fries. Once you remove them from heat, you can toss them in any sauce you like (bbq sauce goes well for people who think hot dogs and ketchup is good eating and who also think tofu is poo poo) or dust them with spices and toss them around a bit.

They aren't french fries but they're a damned tasty side that works with any kind of seasoning or sauce you can think up.

The age tofu at the Japanese place I go to has the most delicious gingery soy scallion dipping sauce, it's good enough to drink

A coarse shred and very fresh lettuce is actually quite tasty. But that's never what you get, and it definitely won't survive a journey in a wrapper and takeout bag even if it were. :(

Eating a baconator (which I my phone has in its vocab list apparently) is literally the only thing that makes my armpits smell. I use deoderant only on Wendy's meal days. I can go running and smell fine, but that meat stack leaks out of me like hell

Lately I've been making burgers on the grill and when I get the coals lit I nestle a foil-wrapped sweet potato amongst them

By the time the coals are ready for grilling, I've got a delicious soft smokey sweet potato to go with the burgers
