I vote medium, but that's because my immune system is iffy as gently caress sometimes.

the real problem tends to be the steak sits too long and keeps cooking. most grill guys at the big chains know what they're doing but the rest of the line will murder a steak

a burger is different because it's ground beef so you want it mostly cooked. some pink is ideal though

if you grind your meat at home you can get it pretty pink but usually at a high class burger joint you can risk a little pink

I love blue steaks but so few steak houses even know what it is. I asked for a blue steak at a steak house in Seattle and they just put blue cheese on it.
