Do you all have any good go to tempeh recipes? It seems like the majority of stuff I found on the net is all just buffalo tempeh. I saw on the last page TC posted a teriyaki tempeh recipe which i'm going to make hopefully tonight!

People tend to think I'm an evil monster when I post this but...

I love to put Accent on my vegan meals.

It's like pretending that my food has protein and nutritional value, even though I know it does not.

edit: I take b12 and multivitamins because I know that a vegan diet is insufficient for human survival, although I know that it is wrong to kill animals and living things so that I can survive. All the pain and suffering that those poor grains, corn, and bean crops go through... it makes me cry.

I am also a big MSG fan. A well planned vegan diet (which includes a vegan b12 supplement) also has plenty of protein and nutritional value, so uh no tricks needed.

Pfffft... it may be a dirty secret, but MSG is all the spice that is really needed for most meals.

I actually dislike adding salt to most of my food.

And when I have guests that more or less crave meat... they don't complain when all I put on their stuff is MSG.

I live my life, and they live theirs. The consequences of their choices are theirs alone. That being said, I recognize that alienating other humans because of their personal beliefs is not a good long-term strategy.

It is entirely possible than in a poop-hits-the-fan scenario, some meat eaters may have skills that can be useful for my survival.

I like basically all of them. Almond milk, soy milk, oat milk, rice milk, hemp milk.... I wouldn't use real coconut milk, since that's way too thick, but the coconut-inspired "coconut milk" that gets sold in cartons next to almond/soy/oat/etc. milk is fine. I generally just buy whatever's cheapest and if the price is equal I buy whatever I didn't buy last time. People seem to have widely varying views on this so just try things out until you find something you like.

Almond is my favorite, and has been since a couple years before I decided to go even mostly-vegetarian. The first time I tasted it, I just really liked it. I went from only using whole-fat dairy milk to almond milk overnight.

But as TychoCelchuuu said, this is going to be a huge personal taste thing. But, but, I'm seconding "you probably don't want to drink real coconut milk" (unless you're making coquito (just sub condensed coconut milk for the condensed dairy -- yes, this is a thing, check your asian market)).

Edit: for clarity, I'm talking about unsweetened, unflavored almond milk. Also, oat milk is delicious but every variety I've seen is sweetened and it's like drinking an oatmeal cookie -- super tasty, but too much sugar for a staple ingredient IMO.

I'm one of the lucky people who loves the taste of unsweetened soy milk. The slightly beany aftertaste is good and it has a great creamy texture. I go through a cartoon of Silk a week and use it for cereal, chai, hot cocoa, anything.

I've also really liked what oat milk I've had. It basically already tastes like cereal milk.

From a health perspective, soy milk is probably the healthiest with complete proteins, low carb, and fortified but if I went with pure taste and a little sweetness? Oat milk.

I lean more towards flax milk being healthiest. I don't think protein is hard to come by on a vegan diet, whereas omega-3 is more challenging. But I should check out the labels on hemp milk, because zinc is also something that's tougher to find.

Taste wise, I think most of them have a good sweetened vanilla flavor at this point, but those are usually higher in sugar. I agree that oat or almond are probably the best unsweetened based purely on taste.

Almond milk consistently tastes like moist cardboard to me.

Personally go for soy milk as it's cheap and tastes good.

Unsweetened regular almond milk is my go to. I used to buy the vanilla, which is tasty, but it doesn’t work in everything.

I drink vanilla almond milk for a long loving time, right up until I tried oat milk and I haven't even considered going back. It is definitely a personal taste thing, and my lactase deficient-rear end never really drank milk before switching to a vegan diet anyway, but vanilla oat milk has the sweetness and the consistency that hits in a way other plant-based milks don't. I don't really do boxed cereal anymore but when I do it rules, and it's 100% my opinion that it's the best option for oatmeal--at least when you basically turn it into a dessert like I do.

Unsweetened oat milk is also my preference by far for when I actually do buy storebought junk food (Read: Literally only mint oreos) so it's, uh, versatile?

I grew up drinking oat milk, I think it was a culturual thing but we would soak oats and then add a little sugar, cinnamon, and blend it. Because of that, even though I know it taste different, I can't bring myself to buy it.

I’m from Scotland and when we make porridge (oatmeal) we do it with hot water instead of milk, so the water turns to milk. Ironic that a country whose national dish is boiled entrails wrapped in boiled entrails was at the forefront of the vegan milk revolution.

If you want to make your own it’s:


3 parts water
1 part oats

Blend for 30 seconds

Strain through a clean T-shirt into a jug. Takes an hour or so.

That’s literally it. I grow my own mushrooms so I dry the leftover pulp and use it for mushroom food. Your only real outlay is buying a suitable jug that you can leave the pulp to strain into, then you can bottle it if you want. I don’t even bother since I can get 1kg of oats for £0.75 (So about 4 litres of oat milk) so it’s so hilariously cheap I don’t even care if it goes off a bit.

You can turn it into cream pretty easily, you just need a bit of oil to emulsify it (check online for a proper recipe). And once you’ve got that you can, and as I said earlier I’m from Scotland, add whisky to turn it into a cream liqueur.

I've been eating Vegan for the last 5 days, just wanted to try for a week to force myself to use different ingredients. So far, so good. Lots of Indian dishes which have been great.

I'll probably do 2 days a week vegan after, better than nothing I guess.

Today I did this as a very light lunch:



Pan-seared king oyster mushrooms, Thai spiced pea and avocado puree with crispy fried shallots.

Oat milk is also the best non-dairy for coffee, all the other options always taste a bit off. Oat has that sweet mild earthy taste that just fits.

Any recommendations for what to make with butter beans? My supermarket is giving me 12 cans as a substitute although I’m not entirely sure for what. Never been a fan but maybe there’s something I’ve never heard of before that uses them!

I’ve - as usual - bought a huge amount of dried, frozen and tinned food so the delivery man will probably think I’m stocking up for Coronavirus lol

They make a good dip/spread if you hit them with some garlic and sweet smoked paprika. They also do well in stew type things - I really like them as part of a mix for a bean chilli.

Anything you use navy beans in Lima beans are better.

I personally try not to overcook them though as they tend to get a bit too soft for my liking compared to say, black beans.

Gigandes plaki is a great dish, I’ll second that.

Just want to throw a plug for black salt as a wonderful spice I avoided for too long. It has that strong sulfury egg smell and flavour you associate with egg things and I avoided it because hipster vegans and their tofu scrambles rubbed me the wrong way.

But as someone who loves baking and misses that custardy flavour in puddings, waffles, etc. Holy poo poo is it a great way to punch up almost any sweet and creamy recipe. Between that and malt powder as instant flavour hacks I feel like I'm cheating whenever I make anything now.

I've been making roasted spiced chickpeas and white beans in the airfryer lately. I bet you could do the same in the oven with the butterbeans. It's kind of fun to play around with the spices. I made some with Italian spices and nutritional yeast that were very tasty.

Update: It had never occurred to me that you could turn butter beans into a spread, so I cooked a can of them, went mental with a potato masher, added chilli, paprika, oil and salt and spread them over toasted bread. My non-vegan but also-stoned friend described the concoction as, "although I'd eat absolutely anything right now this is absolutely magic, I think you're onto something here".

I'd made him homemade spicy bean burgers and homemade focaccia and homemade vegan mayo and homemade pickled cabbage and homemade fried potatoes for dinner, but it turns out all I had to do was mash up a can of butter beans :rolleyes:



Will definitely be trying some of these with the other 11 cans, thanks!
