The ocean is calling and I must go

Definitely going to have to try grilled romaine hearts as well as other BBQ links.

In general I miss barbequing in the summer - not so much missing BBQ meat but just chilling while poking the grill from time to time on a nice day :yayclod:

I'm going on a hike for two days and I'm not going to have any refrigeration or (most likely) cooking facilities, and would prefer to have anything too heavy to carry. Any recommendation?

I've done ultralight for awhile. Bring an empty peanut butter jar and use it as a method of cold soaking things while you're hiking. Make little baggies filled with your preferred dry grains/beans and seasonings, toss it in the empty jar with a cup of water, walk/sleep, crack it open when you're hungry.

It won't be a nice hot meal but that's the trade off for not having to worry about cooking gear or where you're allowed to make your own fire. I was also able to fit a week's worth of food in a bear canister that fit in my bag no problem.

Lazy options also include nuts and dried fruit, tortillas and your choice of nut butter, and a bunch of commercial options (fruits sauce packets, dehydrated food, bars). Vegan dehydrated camping food packs tend to be much pricier and still require boiling/hot water.

Cold soaked oats with dehydrated coconut cream, dried fruit and cinnamon is pro tier ultralight hiking food. Just soak overnight and breakfast is ready when you get up. You can even put instant coffee in there so you don't get headaches as caffeine withdrawal kicks in.

Wait, is cold soaking (e: whole) grains for <24 hours really enough to make them edible ?

Steel cut oats usually require more than 8 hours, so you have to start your soak right after dinner. Rolled oats are easy and could probably soak for like 5 hours.

I didn't try anything like pearled barley or farro. I stuck mainly to rice, couscous, and quinoa.

I was talking about rolled oats sorry, should have mentioned that. There are lots of through hikers that do things with dehydrated beans too but those things are impossible to get here in Australia so I can't comment on what works well there.

Yeah, I know oats are fast. But Vinestalk said "grains/beans" so my mind went straight to barley and black beans. (Actually, it went straight to lentils, because I'm a dope.)

Re: grilling, I made Michael Solomonov's cauliflower shawarma (from Israeli Soul) over the weekend and it absolutely slaps. It occurs to me that instead of brining and roasting the cauliflower, you could brine and grill, or even better, smoke it. Cut up the smoked cauliflower into florets, crisp them up in a cast iron pan with a little oil, and serve them as a pita or wrap with tahini-garlic sauce, chopped vegetables, pickles, and hot sauce? That would be an amazing sandwich.

(The recipe doesn't seem to be online, but there are many cauliflower shawarma recipes out there. I won't recommend any particular one as I haven't tried them.)

Sorry about the sub-optimal photos, but this is what I made for dinner last night:

It's an adaptation of this koshari recipe (lentils and rice, spiced chickpeas, a sour tomato sauce and crispy fried onions; more of a mujadara, really), and this fatteh batenjan recipe (harissa roasted eggplant and zucchini, a yoghourt, tahini and mint sauce, and crispy pita).

And this for dessert:

It's based on this Focaccio di Recco recipe which I adapted into a dessert of cinnamon- and nutmeg-spiced blueberries with sour cardamom cream cheese.

Both were ever so good.

I had my upper jaw sliced off, diced up, and bolted back in two years ago.

Smoothies are great. Dates, coconut milk and ice are a perfect base. Mix up the taste by changing whatever fruits and berries you blend. As a bonus the cold tremendously helps with post-surgery swelling.

Overnight oats are easy. Oats, yoghurt and milk as a base. Add chia & flax seeds, dried fruits & berries, syrup; in the morning soft fruits like slices of ripe bananas.

Vegetable soups are a++ because you can blend them as much or as little as you need. You can also cook soups longer to make the ingredients softer.
Despite my jaw being incredibly hosed, it was nice to squish down really soft potatoes by using my tongue to press them against the roof of my mouth.

Rice porridge (arborio is great for that) and oat porridge. Swirl in butter, jam, and/or cinnamon powder. Again you can cook more/less to change the texture or make it easier to eat without chewing.

Protein shakes were really nice too. Or add protein powder to smoothes and oats.

Yoghurts, puddings and other desserts like that are great.

Honestly the biggest issue I had to overcome was caloric intake. It loving sucks to suck on liquids all the time and you can easily lose your desire to eat.

I basically survived a 10-week jaw wiring on soup, and porridges. (It was winter, though, so I wasn't too interested in smoothies.)
The good thing about veggie soup is that changing herbs and spices can turn the same vegetables into an infinite number of soups.
Adding pesto + yoghourt, or miso to a soup is also a wonderful way to change the flavour. You can also add beans, lentils, barley, rice, etc. which give them a lot more body and blend up really nicely.
This broccoli, pea, and miso is my favourite that I actually have a recipe for. I bolster it by adding white beans which don't effect the pretty colour.
Other favourite soups are pumpkin (pesto + yoghourt is particularly amazing here), spicy red lentil, curried cauliflower, carrot and coriander, and sweet potato with Cajun seasoning and black beans.

As has been said, soaked oats make a wonderful base for a smoothie. Current favourite smoothie is coconut, pineapple and mint. But smoothies are infinitely variable; you can't really go wrong with them.

Seconding porridge also. You can also make incredibly delicious savoury rice porridge; add some finely diced, well cooked veggies, silken tofu, some sort of spicy bean paste, soy sauce, etc. etc.

Chilli and curries can also be blended without ruining them.

There are also a ton of recipes out there for what I'd call a "traditional pudding" (in British English). Basically a steamed or baked self-saucing sponge-based pudding. They come out soft enough that you could just mush them against the roof of the mouth. Serve with custard or ice cream. They're generally not effortless, though, but if you're friend gets bored enough...

And yoghourt, jelly (jello), tinned fruit, etc. aren't the most exciting food options, but they're nice as an occasional very low effort snack.

e: Sorry I can't provide any actual recipes.

Yeah peanut brittle is nice and all, but I was hoping for something a little less tooth-shattering.

I offer as a penance our pretty decent recipe for coffee cupcakes:

quote:

Vegan Coffee Cupcakes
180ml soy milk
20ml cider vinegar
75ml sunflower oil
2tblsp "Camp" Chicory & Coffee Essence
180g self-raising flour
180g soft light brown sugar (or an equal mix of soft light and soft dark)
1/4 tsp bicarbonate of soda
1/4 tsp baking powder
pinch of salt
40g roasted, chopped walnuts or almonds

Icing
150g vegan margarine block
350g soft light brown sugar
1tbsp Camp coffee essence

Method
1. Pre-heat your oven to 180ºC and line a muffin tin with 12 large cupcake cases.
2. Mix the soy milk & vinegar together and put to one side – it will curdle and thicken.
3. Measure out all of your dry ingredients into a large bowl and stir to evenly incorporate.
4. Into your dry ingredients, pour the oil, coffee and soy mixture. Stir until combined.
5. Spoon your mixture evenly between the cupcake cases – they should be about 3/4 full.
6. Tap your muffin tin on the counter a couple of times to knock out any air bubbles and pop it into the oven!
7. Bake for 15-20 minutes, until well-risen and springy to touch. Once ready, leave to cool in the tin for a couple of minutes before placing the cupcakes on a cooling rack.

For Icing

Beat together marg+sugar until very fluffy and light, then beat in the coffee essence. Pipe or spread on each bun when cold.

I've messed with this recipe a good bit and it's pretty flexible - you can add a couple of tablespoons of cocoa powder to the basic recipe and it'll still come out fine, though I usually add a little extra oil+soy milk to maintain the moistness. You can switch out the coffee/nuts for orange zest+orange essence and it's really nice as well.

Both lovely ideas, my grandma made a mean rice pud, and a bread and butter pud, so veganizing both would have great nostalgia value for my mum.

This is genuinely amazing, thank you so much:3: It's been such a pain to try to find recipes that are just vegan - simple google searches have not been very successful since so many sites have recipes with 100+ 5 star reviews that turn out to be "OMG that recipe looks DELICIOUS, will definitely make soon! 5*"

I've been really into making pies and galettes lately, so my favourite vegan dessert involves replacing the butter in Martha Stuart's pâte brisée recipe with vegan butter alternative, and proceeding as normal from there.

The greatest dessert of all time, baklava, is also vegan if you use oil instead of butter.

I'm not a big baker of cakes or biscuits, so I've only tried this with banana bread (and it was a pretty decent success) and it might be a loving disaster. But has your mother tried just searching "X vegan alternative" for each non-vegan ingredient and seeing what happens ?
