I'm just going to name the worst example possible, Juventud Guerrera vs Reese at the 1998 Great American Bash. Juvi is a small cruiserweight, Reese is taller and (at the time) fatter than the Giant, so there's zero offense Juvi can get in that could look any good at all and it's just a ridiculous circus.

Brock Lesnar vs Eddie Guerrero was loving amazing. This is kinda out there, but I remember back in the 80s seeing a Koko B Ware/Andre the Giant match where Koko was just going crazy flying all over the place trying to take down Andre and for just the briefest of beautiful seconds it looked like he might be able to pull it off.... then Andre destroyed him.

Honorable mention to Big Ryck vs Sexy Star, not because it's particularly good, but because of the story the match tells. It's a simple matter of realistic size and weight. Sometimes I think back to the times when JBL was more tolerable on commentary, until I see something like this and realize there really never was a time.

Razor and 1-2-3 Kid is great if only for the surprise finish. Lesnar/Punk is an all-time classic and really demonstrated how to have a guy nearly beat Brock Lesnar while still having Lesnar look like a beast.

The Taz vs Bam Bam matches are a lot of fun because the smaller guy wrestles like he's a foot taller and 50 lbs heavier. Bam Bam is a huge, agile dude and Taz gives no fucks and just suplexes him like nothing. Also, the ring break is such an iconic spot.
