Open needed folder. Right click on the Quick access thingy. Pin current folder to Quick Access.
Or in folder's ribbon click the huge pin to quick access button.

Windows 8.1 with update is a perfectly usable OS even without all that. Average user continues to use desktop/taskbar shortcuts while other continue using Start -> typing that is faster than going through menus.

Unfortunately not always the case. I just pinned two exes (from outside program files folder) to start and they don't even show as pinned. And some exes even in program files folder don't even have an option to pin to start.

I just watched a video of a Windows 10 build 9841 and it had the great taskbar plus metro tiles in a OK looking start menu. SO they had it working. But then some idiot manager decided on a rewrite.

edit Full size version is 2x bigger than it appears to me in use, so it's actually as crisp as it looks using the larger timg scaled version.

Your image is a better illustration of what i don't like. Look at start button - it's a small icon in a middle of large square. The empty space around icon is almost the size of icon itself.
In Windows 8.1 the icons were larger and whitespace on top and bottom smaller.

You can turn off scaling for an individual app by right clicking shortcut and in compatiblity tab click disable scaling.

1. Make their user account a standart user and not administrator.
2. Use windows accesiblity upgrade. It's free and legal. If you want to be extra sure launch magnifier once.
