Apple Cider Mac and Cheese I'm going off memory so the quantities are ballpark. Ingredients: A bottle of hard apple cider An apple (Granny Smith or something tart) Large box of pasta that doesn't have to be macaroni if you don't love America As much of any kind of cheese as you want, shredded (I honestly use ~ 32 oz, and try to use a mix of gruyere and cheddar, but also whatever looks good at the cheese counter) 1 tbsp sodium citrate Preheat oven to 350. Boil the pasta. In a separate saucepan, simmer the apple cider before stirring in the sodium citrate. Add cheese to the cider slowly, while whisking until you reach the desired texture (velveeta-esque). Cut the apple into half-inch cubes, and mix apple and cheese sauce into the pasta. Place mixture in baking dish and bake for 5-10 minutes to soften up the apple pieces. As an option you can top with buttered bread crumbs before baking. I have no idea why you wouldn't do this. It sounds weird but the tart of the apples works amazingly well with the cheese.

Fried Red Tomatoes Makes 2 servings 3 tablespoons bacon grease or 2 tablespoons olive oil plus 1 tablespoon butter 2 firm ripe tomatoes Salt and pepper to taste All-purpose flour 1. Heat the 3 tablespoons bacon grease or 2 tablespoons oil in a 12-inch skillet over medium heat. Meanwhile, core the tomatoes and slice them ½- to ¾-inch thick. Generously season the tomatoes with salt and pepper. Place about ½ cup flour on a plate. 2. If using oil, add the butter once the oil is hot. Working quickly, take a slice of tomato and press one side, then the other into the flour. Press each side twice with gentle but firm pressure. The coating should be thin; dust off any excess if necessary. Place slice in pan, then still working quickly, coat the remaining slices and put them in the pan. Cook just until golden, about 2 minutes, then flip and cook until golden on other side, about 2 minutes more. Drain briefly on paper towels, then serve immediately. Use more tomatoes to add servings. Skill Level : easy

BAKED HABANERO HOT WINGS Ingredients 14~16 chicken wings 2 habaneros, deseeded (alter for spiciness) 1 cup soy sauce 3 garlic cloves 1 small piece (or 1 tsp) ginger 1/2 pear or apple (or 2 tbsp brown sugar) 1/2 small onion 2 tbsp honey salt & pepper (pre-rub) scallions slices (garnish) sesame seeds (garnish) Preparation 1. Apply the salt and pepper on the chicken wings for the pre-rub. Let sit at room temperature for 15 minutes and preheat oven to 375 degrees. 2. Meanwhile, prepare the marinade/glaze by adding all ingredients (minus the honey) to a food processor. Pulse until smooth and completely mixed through. Transfer to a saucepan and add the 2 tbsp honey. Bring to a boil until thickened, 5 minutes. Keep ready until basting. 3. Bake the wings for about 30 minutes while basting them frequently every 10 minutes or so. 4. After 30 minutes, set to broil and let cook for another 15~20 minutes while basting with remaining glaze. Broiling near the end creates crispier and crunchier wings that we personally enjoy. 5. When wings are charred and slightly burned, transfer to a serving plate. Let cool for several minutes and garnish with thinly sliced scallion and/or toasted sesame seeds.

Oh god I dunno which recipe I should do so I'm gonna do both. They compliment each other well and make a great meal. Got me through a lot of days as a latchkey kid. Honey Baked Chicken Makes 3 Breasts 3 skinless, boneless chicken breasts (6 halves can also be used) 1/3 cup butter, melted 1/3 cup honey 1 tspn salt 2 tbsp mustard powder (to taste) Preheat oven to 350F Place breasts in 9x13 baking dish. Mix butter, honey, salt, mustard until smooth, pour evenly over chicken bake in oven until sauce is bubbling or chicken is no longer pink inside. 45 minutes, depending on thickness of breast. If using full breast may be closer to 90 or 110 minutes Cinnamon Buttered Sweet Potato Makes 1 Sweet Potato 1 Sweet Potato 2 tbsp butter (melted 2 tbsp brown sugar 1 tspn cinnamon (optional) 1/2 cup small marshmallows Poke holes in sweet potato Bake sweet potato in microwave for 5-10 minutes until inside is soft (alternatively, place in oven at 400 degrees for 45-60 minutes) Mix cinnamon, brown sugar, and butter until uniform Cut sweet potato down the middle to open. Pour in sauce Add marshmallows

Mix ricotta cheese, Parmesan cheese, mozzarella cheese, eggs, and oregano in a second bowl. Break ends of about 4 lasagna noodles to fit in dutch oven, making one layer covering the bottom. Spread 1/3 of the hamburger mixture over the noodles. Spread 1/2 of the cheese mixture over the hamburger. Make another layer of lasagne noodles. Spread 1/2 of the remaining hamburger mixture over the noodles. Spread the est of the cheese mixture over the hamburger. Make one more layer of noodles. Spread the remaining hamburger mixture on top. Pour the water around the inside edge of the dutch oven. Cover and Bake at 300 degrees for about 45 minutes. If you can stick a knife through to the bottom with no resistance from the hard noodles, it is done. When cooked, sprinkle remaining mozarella cheese on top and cover for 5 minutes. Serves 8.

Mix alls ingredients for filling in a bowl 5. spread out a kitchen towel on counter, lightly coat with flower 6. roll out 1 piece of dough on the kitchen towel until very thin (should be able to see towel pattern through dough) 7. spread half of the filling onto the dough, leave 3-5 cm rim on right, 2-3 cm rim on top and bottom and about 4-6 cm rim on left side free of filling 8. roll up the dough around the filling by lifting kitchen towel on right side and drawing it over to the left side, the dough should roll onto itself encasing the filling 9. pinch closed the upper and lower end of the "strudel roll" 10. Okay okay, here's my recipe for the best goddamn potato curry you'll ever make. I'm no chef, but even I wow myself with this recipe that my mom gave me before she passed. I'll recite the instructions exactly as she said them to me. Potato Curry Ingredients: - 5 potatoes (not sweet potatoes) - 1 cup of frozen peas - 1/2 onion - 3 teaspoons of garam masala - 2 teaspoons of curry powder - diced cayenne peppers (or just green chilis, or if you want it mild just throw in X bell peppers) - 1 teaspoon mustard seeds Preparation: 1. Take a pan and pour some oil in it. 2. Throw in the mustard seeds, they will start 3. cut up those potatoes as fast as possible (no need to peel), you were supposed to do it earlier you lazy rear end in a top hat. Then throw them in the pan. Mix constantly. 4. throw the peas in the pan. Keep mixing 5. cut up half the onion, and throw it in the pan. Sautee! Sautee! Slice it up into thin slices, don't just toss half of it in there, you mongrel. 6. Garam masala go! Mix! Mix! 7. curry powder go! Mix! Mix, you bastard! 8. What, you forgot the cayenne peppers? That's okay, you can put them in last. Sautee into tiny slivers and just toss them on top. Mix more. 9. When the potatoes have sufficiently browned, turn off the stove. Now you have a tasty potato curry. Eat with rice, or toasted tortillas.
