My favorite example of a one dude one keyboard and amazing music is brad Fiedel's Terminator soundtrack.
One dude, one keyboard, and it ended up being so goddamn memorable.

On the other side of the spectrum, there was Basil Poledouris with the orchestral score for Robocop. ALSO immediately memorable.

Paradox has managed to hilariously break the crusader kings 2 tutorial due to adding a looooot of new features and changes with each expansion, or at least it used to be that the tutorial for it was not finisheable due to it. Maybe they have fixed it already, but it was pretty funny.

It does help that CK2 is a good game, but they keep adding new features to it all the time.

eh, they could find ways to add functionality to it. you could say what you're saying about a lot of games, like in a shooter they don't need to have details in the environment it could just be brown one-way corridors and serve the same purpose or it could have details and non-essential rooms to check out that impact literally nothing but your experience in the game.

The way SUPERHOT does it is interesting, but then again, SUPERHOT does have a pretty neat art direction to begin with. There is a level of detail in the environments (and models) but it is that way to emphasize the gameplay elements.
