Thanks to the recommendation from this thread and its predecessor I have purchased a Thermopen MK4, it is very cool and good, and I have already used it to great effect on some chicken breasts I got the other day. 10/10 would buy again, and I wish my gramma had had one of these so that my perception of chicken breasts would not have been "leather made of strings" for the better part of my childhood.

This is kind of a long shot to ask here, but I can't seem to find the right combination of search terms for google. I need a thin mat that I can put on my kitchen counter that won't slide around and is also smooth on top (so a suction cup will hold on it). Dishwasher safe would be a plus.

I have an electric stove that I can't replace, so I'm looking into getting a powerful portable gas stove that I can just put on one of the burners and never move as a compromise (also want to get into wok cooking finally with this). Any recommendations?

How often do good stand mixers go on sale? I noticed that Costco's got their 6qt kitchenaid on sale for 250 (down from 330) but I was wondering if I should hold out for a better deal or if that's about as good as I'll get.

Follow up question, how much do you guys use your stand mixers? I make cookies and egg pasta once a month or so and I'm interested in learning bread/cakes but I'm wondering if the stand mixer really does anything that you couldn't do with more elbow grease instead.
