My friend got an induction cooktop that he likes to use for deep-frying. It's nice because he doesn't use a burner, and there's no exposed flame so less fire risk. But the best thing is the temp control. I've been thinking of doing similarly

Been doing a lot of deep frying lately and it makes me miss my access to a real deep fryer at my old restaurant jobs

So I've been giving a thought to buying a one- or two-basket countertop deep fryer

Are there recommendations for a good solid one?

Oh my god those things are so fun to use. Like my little home immersion blender is fun, but the big gently caress-off immersion blenders I used at work were next level.

Nothing useful to add, unfortunately. Just reminiscing about big blending.

One place I worked had these cambro labels that were meant to dissolve in the dish pit, and to be fair they mostly did. But they'd leave this scuzzy rectangle that objectively didn't matter but still drove me nuts. I want pristine cambros!

I remember excitedly getting a big Costco roll of plastic wrap, then putting it on a wire shelf above my toaster oven. Never thinking, as I'm prone to do, "hey heat rises" and "hey this will gently caress up the roll post-haste"

I should take a shot of every pot and pan I have.

I actually sort of wish I did that every now and then, so I could look back and reminisce. There's some items that I used to their utter destruction, being able to see something that was such a big part of my cooking life again would probably bring tears to my eyes.
