Yeah, that "play me stuff I haven't heard recently" feature would be awesome. My google music "why can't I do this?" thing is why can't I set what mode it goes to when I use the "play some music" ok google command? Instead, it goes to a semi-shuffled playlist of all my music, weighted by number of plays. Which means that if I do that habitually it eventually settles on just a few songs it loves to play and never plays other stuff in my library. I wish it would just shuffle all my music, period.

Google fit consistently correctly detects my bike commuting. I have a nexus 6 that I keep in my jersey pocket while riding, as well as an Android wear watch. I don't use Strava, but i do use Garmin connect. I don't think Garmin connect feeds into fit, though. I'm honestly surprised that you guys are having problems with it. I was in the ride report beta, but it never successfully detected a bike ride.

If I have a decent library of uploaded music, and absolutely no interest in the radio or discovery features or YouTube, it's probably time for me to bite the bullet and set up Plex, isn't it?

Yes, Nova on Android 12 on pixel 3xl, there's a very noticable lag after returning to home screen before it will accept any input such as swiping to another screen or opening an app. I haven't tried rebooting yet, might as well. My pixel 6 pro is supposed to arrive today (if FedEx isn't lying again), so I'll get to see if that's any better either.

The discover feed on my pixel 6 pro has recently started including ads. I suspect this is a server side switch and everyone's affected, but I had thought I read somewhere that pixels were excluded from discover ads. Is this happening for everyone else? Is there a solution, or do I just abandon discover?

Like, don't give me Outlook notifications after 6 pm or on the weekends, completely silence my phone at night. Can't help you with outlook, but I use Quiet for Gmail to silence my work email exactly like you describe.
