I love watching cooking videos, especially the ones that demonstrate a specific tip or technique concisely. A few minutes on YouTube can show you that the way you've been doing XYZ is stupid/slow/wrong and change the way you work in the kitchen forever. This thread is for posting and discussing cool cooking videos. If you post a link please include a one sentence summary of what it's about so others can decide if it's something they're interested in watching. You people probably know way more about this subject that I do but here's a few examples to get things started: How to de-bone a whole chicken https://www.youtube.com/watch?v=EPMnQRlMbW4 How to chop/paste garlic https://www.youtube.com/watch?v=1y5h1pDHhzs How to cut a bell pepper via the rolling technique, plus a few alternate ways of dicing the edible part https://www.youtube.com/watch?v=3KRGi17Xg0Y

Oh, here's one! https://www.youtube.com/watch?v=BYKqUGdc7rc I've made this recipe several times (using a regular stainless steel pot) and it's wonderful. Everything from Rick Stein's Mediterranean Escapes is great.

^^^ I made the thread in earnest, I genuinely like watching cooking videos to learn new stuff. The Henry's Kitchen video was actually kinda funny.Kenning posted:https://www.youtube.com/watch?v=BYKqUGdc7rc Is there a written recipe for this version somewhere? My attempts to google it turned up this which looks pretty similar but seems heavy on the tomatoes relative to what Stein showed.

I never measure anything with this dish because he didn't tell me anything to measure. I think I usually use 1.5 pounds meat split between beef and lamb, and one 28 oz. can of diced tomatoes. I've never made it with fresh because I never remember to make it during fresh tomato season. For the seasoning I've done it using sweet paprika and a bit of cayenne pepper when I couldn't find hot paprika, but it's easier to dial in the heat with hot paprika. Really feel free to scoop in the spices too, it makes the dish wonderful.

This is one of my absolute favorite videos even though it's very basic. It is Gordon Ramsay making scrambled eggs along with a couple things on the side. https://www.youtube.com/watch?v=PUP7U5vTMM0 As others have pointed out, this is not something Ramsay originated, this is an absolutely standard thing. But it's one of the things that got me to start cooking seriously. It taught me that there's some nuance to cooking even for basic dishes, but really what does it for me is his enthusiasm. It got me amped up to learn.

Ramsay also got me into cooking at home. The shows he has where he cooks and shows enthusiasm for food are so much better than the ones where he stands there and is angry and shouts at people for being dumb.

I've really been getting a lot out of Gordon Ramsay's Ultimate Cookery Course. It's about 20 episodes with very solid and reasonable recipes, technique tips, and these background bits that cover topics specific to the episode. Like, one episode with a lot of mushroom focus will have this 5 min sidebar where a mushroom vendor in a London market goes over all the important types, how to clean them, pick them, when to use them, etc. Some episodes visit a butcher, an egg farm, fish market, etc. It's a show that aired on Channel4 in the U.K: http://www.channel4.com/programmes/gordon-ramsays-ultimate-cookery-course But as far as I can tell, there's no legitimate way to throw money at it and purchase the episodes. I first came across it on youtube, but now I usually re-watch the episodes over here: http://www.dailymotion.com/video/xtgc70_gordon-ramsay-s-ultimate-cookery-course-s01e01-getting-started_lifestyle My favourite episode is this slow cooking one (E13): http://www.dailymotion.com/video/x27j0tp_gordon-ramsays-ultimate-cookery-course-s01e13_shortfilms I've done the beef short ribs with pancetta sauté mushrooms for big holiday meals and people are blown away by it. This episode also has the mushroom man. If anyone has seen a place where these episodes can be purchased, I'd love to throw at the guy. He's incredibly entertaining and interesting when he's just cooking rather than playing the bully on TV.
