I just finished my first read of it the other day and I'm no expert but I don't think the large numbers given are too incredible to believe. Xenophon gives as an explanation at one point that the ten thousand are very mobile compared to such a large army. If I didn't miss anything, they deal with a lot of harassment and attempts to block their way but don't actually fight the entire king's army again after the truce is broken.
