I’m having childhood flashbacks to visiting the market where you could get this along with small plates of cockles, mussels or whelks also swimming in vinegar. Also reminds me of my uncle Jimmy sat eating bread and dripping in front of the fire in his string vest with his braces let down.

The spanish make a stew with tripe. It has a very flavorful broth with onion, garlic, chorizo sausage, serrano ham, paprika, garbanzo beans, etc. It's rather good.
