Organic and free range chicken had a larger chance of being contaminated than industrial raised chickens. They found practically no contaminated beef, pork or lamb.

These days at least farmed Norwegian Salmon is considered parasite free and the regulatory agency considers it ok to consume raw without prior freezing.

I have never sous-vided. I thought it was a weird pressed meat slab because of the little lines!

A langoustine tail, some emulsion and probably leek ash, is my guess. It probably is pretty great.
