Most of the games I'm thinking of that are mostly easy have bonus modes that are harder like Cave Story's Hell or Half Minute Hero's Hero 3 mode. maybe Morrowind is the easiest if you stumble into one of the ten thousand ways to accidentally snap the game over your knee

Cave Story has a really good difficulty curve where it starts out amazingly easy and ends up decently hard in the secret stage.
