Most of the games I'm thinking of that are mostly easy have bonus modes that are harder like Cave Story's Hell or Half Minute Hero's Hero 3 mode.

maybe Morrowind is the easiest if you stumble into one of the ten thousand ways to accidentally snap the game over your knee
