I think Giant Woman is what I would recommend as a first episode. It's the first episode where you really get to see the Pearl/Amethyst interaction at full intensity so you don't lose much by not having seen much of their relationship before that, and it has everything. A good song, lots of good jokes, and for my money one of the absolute best action sequences in the whole series (also with awesome music). Alternatively,

It gives some interesting insight into Garnet's experience too, we've seen her talk to herself and nearly fall apart before with the forced fusions, which is probably how she knows exactly what Stevonnie is dealing with in the first place. Garnet was teaching Stevonnie how to talk through your issues with your friends and partners because she's an expert at it.

Uncorrupting gems is obviously going to involve Steven astral projecting into some hosed up traumatic dreamscape, probably involving the possibility of him getting corrupted while trying, so it's not going to be something he can just casually do for all the hundreds and hundreds of bubbled gems in the temple.
