Nadiya's Time to Eat, a BBC television show also on Netflix, is tremendously wholesome. She's adorable. I don't really give a poo poo about any of the food but she also does some non-recipe stuff like visit a mushroom farm or the Marmite factory and those segments are great too.

I think Babish seems like a nice guy who is very excellent at making videos, and not very good at being in videos or cooking. His channel exploded in popularity because he was barely in any of the videos except as hands and a disembodied voice saying stuff you could basically ignore and cooking food that wasn't supposed to taste good. I've never even been slightly tempted to click on the videos where apparently he goes around making people happy because he's drunk on his own popularity and like others I hope he stays out of Sohla's videos as much as possible. He needs to internalize the fact that what made him famous was gorgeous videos where we never even saw his face and which made no pretense about his having any skill at all. He's not a personality I can't get enough of. He's an intrusion I can't get away from fast enough. Love his videography and editing sensibility and I wish he'd just lean into that and be a behind the camera guy instead of going even harder on the whole cult of personality bullshit by naming the channel the "Babish Cinematic Universe." It's like if Bon Apetit's videos were all framed as "Rapaport's Minions" and Rapaport introduced every video with an awkward conversation with the host in which he gave them their assignment. Nobody wants that poo poo.

Sohla's paratha rolling technique in the latest video (after adding the fat and rolling it, coil it from both ends rather than just one, and stack the two coils on top of each other by twisting) blew my mind. That's such a good idea and it never occurred to me.

Babish seems like a nice guy and he's amazing at making videos but he is not a great cook. You'll get much more out of Googling the same keywords he does and following the same recipes he does. At least he eventually started shouting out the recipes he had clearly Googled. Weissman is great except I hate the voice he does and the personality he affects. If he would just be normal his videos would be great. Never seen any Ragusea or Cheblowski videos. I see Ragusea has a video titled "Deep Frying at Home is a BAD IDEA" which is either clickbait or sacrilege. I like Kenji, although the chewing sounds do get me a bit, and I agree that he's very unsystematic about when to be systematic and when to just repeat stuff everyone has said without testing it, or with testing it a tiny bit incredibly unscientifically in a way that fails to establish anything like the conclusion he draws and then repeats like it's been definitely proven.

I feel like a lot of YouTubers are one "the paycheck is how much????" away from pivoting to being alt right and Babish wouldn't surprise me if one day he did that, although to be fair I haven't watched his videos in a long time so I might just be slandering a wonderful guy whose only sin is loving money enough to support JK Rowling but no more than that, which to be fair is still kind of bad considering he's already got it made.
